Sorry to spoil the fun but here's how its done.

Whatever number you select, once you do the subtraction part the number you are left with is a multiple of 9. So the only numbers you can be left with are; 9, 18, 27, 36, 45, 54, 63, 72 and 81.

Now look at the symbols. These numbers all correspond to the same symbol so thats the symbol that will be selected. Problem solved.
