Due to the water being displaced being replaced with a large quantity of air, if that makes sense. It's similar to why an empty sealed bottle floats. If you then create a hole in the upper surface of the bottle, it will still float. Once water can enter, however, it will sink. Similarly, a large ship will stay afloat till water gets in.
Obviously, the weight of objects in the ship will affect its buoyancy, and a heavy-laden ship will see the water line higher thereon than if it were empty.
