i think a weekly tournament would be a good idea, maybe held on sunday afternoon, you could have regular adverts for this tournament and the winner should have his or her name on some sort of message board for that week, the tournament would attract lots of players and give the regular winners something else to fight for, 8 ball would be my pick but also could be done for the other games, what do you think?
